After the success of the Dewar's Whisky dinner in April, we are bringing back the drams for another night of single malt whisky from the Scottish islands of Orkney. Highland Park has been distilling whisky on the Orkney Archipelago since 1798 and every sip comes with the distinct taste of these wild lands at the edge of the Arctic Circle.
The evening will begin with a cocktail created especially for the night. Enjoy the well-balanced smoke and honey sweetness of the Highland Park 12 Year Old Single Malt ‘swizzled’ with flavours of mint, lime and ginger. You’ll also be introduced to Vietnam Brand Ambassador of Highland Park, Steve Nguyen, who will tell the story of Highland Park, its Viking roots and the whisky you’ll be tasting.
Your Single Malt Scotch whiskies will be paired with fine foods from across the world, including starters of Alaskan King Crab and carpaccio of Japanese A5 Hitachi Wagyu. The latter is elevated with the rich peaty finish of the Highland Park 18 Year Old Single Malt. Enjoy the second dram of the Highland Park 18 Year Old with Monkfish served with a hearty offal barley and oatmeal ragout, roasted pumpkin, and a fiery white peppercorn sauce.
For dessert, Mr. Steve will guide you through the Valkyrie – a limited edition of Highland Park. Calling on the legends of the Vikings for inspiration, this special release whisky recently won the Ultimate Spirits Challenge with a score of 99/100. The complexity of flavours in the Valkyrie pairs perfectly with the delicate taste of our parsnip and white chocolate mousse, to be enjoyed with roast banana compote, honeycomb and milk ice cream.
