The abalone is simmered in a chicken broth, which has been previously prepared for 24 hours, until turning soft and sweet. At the same time, fish maw is stewed with Chinese wine and ginger to absorb all the pungent aromas.The two are put together with mushrooms, broccoli and baby tomato before a special sauce is poured on top spicing up all the flavours.
